Crunchy Collagen Cookies
These cookies are crunchy, insanely satisfying and not too sweet with an impressive 7g of protein per cookie!

INGREDIENTS

  • 6 Tbsp (90g) Nuttalex lite Margarine
  • 1/3 cup sugar
  • 1 egg white
  • 2 Tbsp desiccated coconut
  • 35g @thecollagenlab premium collagen peptides
  • 1/2 cup dark choc chips
  • 1 cup gluten free self-raising flour
  • 2 Tbsp almond Milk
  • 1 cup Soy protein crisps 
  • Cooking Spray

DIRECTIONS

  1. Preheat oven to 180C fan forced.
  2. In a large mixing bowl, cream margarine and sugar.
  3. Add egg white and beat.
  4. Fold in flour, coconut, collagen, soy crisps, milk and sultanas until ingredients are combined.
  5. Drop 12 dessert spoons of mixture onto a baking tray that has been coated with cooking spray or lined with baking paper.
  6. Flatten each cookie.
  7. Bake 20 minutes or until golden brown.
  8. Cool on wire rack.

TIP: store in an airtight container and try not to eat them all!
