These cookies are crunchy, insanely satisfying and not too sweet with an impressive 7g of protein per cookie!
INGREDIENTS

- 6 Tbsp (90g) Nuttalex lite Margarine
- 1/3 cup sugar
- 1 egg white
- 2 Tbsp desiccated coconut
- 35g @thecollagenlab premium collagen peptides
- 1/2 cup dark choc chips
- 1 cup gluten free self-raising flour
- 2 Tbsp almond Milk
- 1 cup Soy protein crisps
- Cooking Spray
DIRECTIONS
- Preheat oven to 180C fan forced.
- In a large mixing bowl, cream margarine and sugar.
- Add egg white and beat.
- Fold in flour, coconut, collagen, soy crisps, milk and sultanas until ingredients are combined.
- Drop 12 dessert spoons of mixture onto a baking tray that has been coated with cooking spray or lined with baking paper.
- Flatten each cookie.
- Bake 20 minutes or until golden brown.
- Cool on wire rack.
TIP: store in an airtight container and try not to eat them all!
