One-Bowl Collagen Brownies
Makes: 8 serves 

You can't go past this nutritious recipe, don't be fooled by the pumpkin - it creates the fudgiest and most decadent brownie with all those healthy additions like cacao and almond butter. 
  • 250 g cooked mashed pumpkin (1 cup)
  • 2 eggs
  • 1/4 cup coconut sugar 
  • 1/3 cup monk fruit sugar substitute (65g)
  • 2/3 cup chocolate protein powder (70g)
  • 1/3 cup cacao powder (30g)
  • 1/4 cup almond butter (65g)
  • 20g @thecollagenlab premium peptides
  • 1/2 tsp baking powder
  • Pinch salt 
  1. Mashed cooked pumpkin into a bowl
  2. Add all your other ingredients and mix well
  3. Bake at 180°C for 25 minutes
  4. Cut into 8 serves and store in the fridge for seven days or wrap individually in baking paper and freeze for 6 weeks
