You can't go past this nutritious recipe, don't be fooled by the pumpkin - it creates the fudgiest and most decadent brownie with all those healthy additions like cacao and almond butter.
- 250 g cooked mashed pumpkin (1 cup)
- 2 eggs
- 1/4 cup coconut sugar
- 1/3 cup monk fruit sugar substitute (65g)
- 2/3 cup chocolate protein powder (70g)
- 1/3 cup cacao powder (30g)
- 1/4 cup almond butter (65g)
- 20g @thecollagenlab premium peptides
- 1/2 tsp baking powder
- Pinch salt
- Mashed cooked pumpkin into a bowl
- Add all your other ingredients and mix well
- Bake at 180°C for 25 minutes
- Cut into 8 serves and store in the fridge for seven days or wrap individually in baking paper and freeze for 6 weeks
