Single Serve Collagen Berry Crumble

This one is on repeat in our house. It's simple, cosy and takes just a few minutes to throw together. Perfect for a slow weekend breakfast, afternoon treat or when you're craving something sweet without making a whole batch.

Ingredients

Berry filling

  • 3/4 cup frozen mixed berries
  • ½ tsp cinnamon
  • ½ tsp vanilla extract

Crumble topping

  • 3 tbsp collagen overnight oats
  • 1 tbsp flaked almonds (or your favourite nuts)
  • 1 tbsp desiccated coconut
  • 1 tbsp premium collagen peptides
  • ¼ tsp sea salt
  • 2 tsp melted coconut oil
  • *Drizzle this on top: 1 tsp maple syrup 

To serve

  • Greek yoghurt or coconut yoghurt

 

Method

  1. Preheat your oven to 180°C (or air fryer to 160°C).
  2. Add the berries, cinnamon and vanilla to a small ovenproof ramekin and stir together.
  3. In a separate bowl, combine the oats, almonds, collagen peptides, coconut, salt and melted coconut oil until the mixture starts to clump together.
  4. Spoon the crumble over the berries and gently press it down with the back of a spoon. Then drizzle with the maple syrup.
  5. Bake for 15 minutes, or air fry for 10 minutes, until the berries are bubbling and the crumble is golden.
  6. Serve warm with a generous dollop of yoghurt.
